RÉGULIER
レグリエ / RÉGULIER
At RÉGULIER in Hiroo, a restrained number of seats sets the stage for course menus that blend robust classical French craftsmanship with seasonal Akita produce, complemented by thoughtful wine pairings.
01 / ABOUT THE PLACE
Set along Meiji-dori between Hiroo and Ebisu, RÉGULIER is an intimate French restaurant run by its chef and madame. By welcoming only a limited number of guests each day (1), the compact dining room maintains a serene, unhurried pace, paired with attentive hospitality at every table.
What arrives on the plate reflects robust classical French foundations honed in esteemed Ginza kitchens, combined with an appreciation for regional produce from Akita, the madame's home prefecture, and beyond. Presentations unite traditional saucing with seasonal harvests—perhaps a delicate carrot mousse topped with sea urchin and clear consommé jelly, or morel mushrooms stuffed with Hinai jidori chicken mousse alongside tender white asparagus. From gently braised Akita Yuri beef to fragrant roasted meats, each dish highlights its core ingredients with precision.
An ample selection of French wines complements the kitchen's craft, available by the glass or as structured pairings designed to follow each course. Concluding with citrus-laced crêpes Suzette and a cup of espresso, dinner unfolds into a memorable evening under the team's thoughtful care. Operating primarily for dinner on an advance-booking basis, it is a setting well suited for milestone occasions or quiet evenings when you wish to take your time over good food.
